Process
Fresh moringa leaves are shade-dried — not sun-dried — to preserve the heat-sensitive vitamins (particularly Vitamin C and folate). The dried leaves are then dry-roasted briefly with chillies and cumin before traditional pounding together. Shade-drying is critical — direct sunlight degrades moringa's vitamin content.
