Process

Ragi grains are soaked in water and allowed to sprout in shade for 24-48 hours. The sprouted grains are shade-dried carefully — not sun-dried or oven-dried — to preserve the activated enzymes. The dried sprouted grains are then traditionally pounded and milled.
